20 Minute Tacos!

This recipe is not only delicious, filling, meat-free but it’s so damn easy and quick!  Only 20 minutes and 5 steps!

I should mention that these are even better than meat-filled tacos!

Get a can of your favourite beans, try to get them organic or soaking them beforehand is best.  But, sometimes that’s not possible so canned is fine.  Okay, here we go, set your timer!

  1. Get a pan on medium-high heat and heat the coconut oil up.  Throw in a can of beans, mushrooms and garlic. *3 minutes

  2. Fry these up until the skin turns crispy. *5 minutes.

  3.  Add in the salsa or tomato sauce and cook down until its thick and no longer sauce-y.  Take off the heat once thick.  *5 minutes

  4. Heat the tortillas under a broiler or in a pan on medium heat.  *1 minute per side

  5. Now you can create! Smear the plain Greek yogurt on the warmed up tortilla’s.  Top with beans, tomatoes, red onions and cilantro. *5 minutes

  • Other add ins that I crave are jalapenos fried in with the beans or organic Goat-feta sprinkled on top!

Ready in 20 minutes!  Fast and easy meal for lunch or dinner!  Hope you enjoy these as much as I do.
